We had posted this April 2007. When Michelle called for the recipe I was actually eating Cincinnati Chili and the one place in town that I know serves it!
Create-A-Chili Mixture
4 pounds lean ground beef
3 cups water
3 cups chopped onions
4 garlic cloves, minced
3 TBL chili powder
2 TBL cumin
1 TBL salt
1 teas pepper
1 (12 oz) can tomato paste
In a large saucepan combine beef, water and onion: mix well. Cook covered over medium heat for 30 minutes or until crumbled and cooked, stirring frequently. Drain. *
Add remaining ingredients: mix well. Cook covered over medium-low heat for 30 min. to blend flavors, stirring occasionally. Cool completely: refrigerate until cold. Makes 11 cups
*cooking ground beef with water results in a fine texture mixture with less fat. For a coarser texture with larger chunks, omit water. Brown ground beef, onion and garlic: drain.
Cincinnati Style Chili
2 cups create a chili mixture
1/2 cup water
1(8oz) can tomato sauce
1 teaspoon allspice
1/4 teaspoon cinnamon
1/4 teas ground red pepper
1 TBL vinegar
1/2 teaspoon Worcestershire sauce
8 oz. uncooked spaghetti
2 oz (1/2 cup) shredded cheddar cheese
In large saucepan, combine all ingredients except spaghetti and cheese: mix well. Cover: simmer over
medium heat 30 min. Mean while, cook spaghetti to desired doneness as directed on pkg. Drain. Serve
chili over spaghetti. Top with cheese.
